Ingredients

  • 4 eggs
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup salted caramel sauce
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup crushed candy canes (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a mixing bowl, whisk together the eggs and sugar until light and fluffy.

  3. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold until just combined.

  4. Pour the batter onto the prepared baking sheet and spread it evenly. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean.

  5. While the cake is still warm, carefully roll it up from the short end, using the parchment paper to help. Let it cool completely.

  6. Unroll the cake carefully and spread the salted caramel sauce evenly over the surface.

  7. In a separate mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  8. Spread the whipped cream over the caramel-covered cake and roll it back up, gently peeling away the parchment paper.

  9. Transfer the yule log to a serving platter and refrigerate for at least 1 hour.

  10. Before serving, dust the yule log with powdered sugar and sprinkle with crushed candy canes, if desired.

  11. Slice and serve chilled.
