Ingredients
- 1 ½ cups all-purpose flour
- ⅓ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup whole milk
- 1 cup strong brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 8 ounces mascarpone cheese
- ½ cup powdered sugar
- 1 cup heavy cream
- 2 tablespoons unsweetened cocoa powder, for dusting
- Chocolate shavings, for garnish
Instructions

Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.

In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

In a separate large bowl, cream together the butter and granulated sugar until fluffy. Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.

Pour the batter into the prepared baking pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool completely.

In a small bowl, combine the cooled coffee and coffee liqueur (if using). Set aside.

In a medium bowl, beat the mascarpone cheese and powdered sugar until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the mascarpone mixture until well combined.

Cut the cooled cake horizontally in half. Place one half back into the baking pan. Brush the cut side with half of the coffee mixture. Spread half of the mascarpone filling over the cake.

Place the remaining cake half on top and brush with the remaining coffee mixture. Spread the remaining mascarpone filling over the top.

Dust the cake with cocoa powder and garnish with chocolate shavings. Refrigerate for at least 2 hours before serving.
