- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup buttermilk
- 1/2 cup shredded carrots
- 1/4 cup chopped walnuts
- 1/4 cup raisins
- cream cheese glaze:
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
Instructions

Preheat the oven to 350°F (175°C) and grease a bundt pan.

In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

Add the cold butter to the flour mixture and use your fingers or a pastry cutter to cut it in until the mixture resembles coarse crumbs.

Stir in the buttermilk until the dough comes together.

Fold in the shredded carrots, chopped walnuts, and raisins.

Roll the dough into small balls, about 1 inch in diameter, and place them evenly in the greased bundt pan.

Bake for 25 minutes, or until the bread is golden brown and cooked through.

While the bread is baking, prepare the cream cheese glaze by mixing together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.
