Ingredients
- 200g dates, pitted and chopped
- 100g walnuts, chopped
- 175g self-raising flour
- 1 tsp baking powder
- 125g unsalted butter, softened
- 125g light brown sugar
- 2 eggs
- 1 tsp vanilla extract
Instructions

Preheat the oven to 180°C (350°F) and grease a loaf pan.

In a small bowl, pour boiling water over the chopped dates and let them soak for 10 minutes. Drain and set aside.

In a separate bowl, mix together the flour and baking powder.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add the flour mixture to the wet ingredients, mixing until just combined.

Fold in the soaked dates and chopped walnuts.

Pour the batter into the prepared loaf pan and smooth the top.

Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.

Allow the loaf cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
