Ingredients
- 1 and 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup cherry pie filling
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 cup dark chocolate shavings
Instructions

Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a separate bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.

Alternate adding the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.

Pour half of the batter into the prepared loaf pan. Spread cherry pie filling evenly over the batter. Top with the remaining batter, spreading it evenly.

Bake for 45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

In a chilled bowl, whip the heavy cream and powdered sugar until stiff peaks form.

Once the cake has cooled, spread the whipped cream over the top. Sprinkle with dark chocolate shavings.
