Ingredients
- 1 cup raisins
- 2 tbsp sherry
- 1 cup almond flour
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup sliced almonds
Instructions

Preheat the oven to 350°F (175°C) and grease a round cake pan.

In a small bowl, combine the raisins and sherry. Set aside.

In a large mixing bowl, whisk together the almond flour, all-purpose flour, sugar, baking powder, and salt.

In another bowl, whisk together the melted butter, eggs, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Fold in the raisins and sherry mixture.

Pour the batter into the prepared cake pan and smooth the top.

Sprinkle the sliced almonds on top of the batter.

Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
