Ingredients
- 2 cups of cooked squash, mashed
- 1 cup of cooked black beans
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup of shredded cheese
- 8 tortillas
- 1 cup of enchilada sauce
Instructions

Preheat oven to 350°F (175°C).

In a large skillet, sauté onion and garlic until softened.

Add mashed squash, black beans, cumin, and chili powder to the skillet. Stir well to combine.

Warm the tortillas in a dry skillet until pliable.

Spoon the squash and bean mixture onto each tortilla, roll up, and place seam-side down in a baking dish.

Pour the enchilada sauce over the rolled tortillas, making sure they are well coated.

Sprinkle shredded cheese over the top.

Bake for 30-40 minutes, or until the enchiladas are heated through and cheese is melted and bubbly.
