Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 can (15 oz) refried beans
- 1/2 cup enchilada sauce
- 1 can (4 oz) diced green chilies
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, brown the ground beef over medium heat. Add the diced onion, minced garlic, cumin, chili powder, salt, and black pepper. Cook until the onion is tender and the beef is cooked through.

Stir in the refried beans and half of the enchilada sauce. Cook for an additional 2-3 minutes, until heated through.

Spread a spoonful of the remaining enchilada sauce on each tortilla. Divide the beef and bean mixture evenly among the tortillas and roll them up.

Place the burritos in a baking dish and pour the diced green chilies and remaining enchilada sauce over them. Top with shredded cheddar cheese.

Bake for 20 minutes, or until the cheese is melted and the burritos are heated through.

Serve the smothered burritos hot, garnished with chopped fresh cilantro.
