Ingredients
- 4 large potatoes, peeled and sliced into rounds
- 1 onion, thinly sliced
- 1 green pepper, thinly sliced
- 1 red pepper, thinly sliced
- 200g chorizo, sliced
- 4 cloves of garlic, minced
- 1 tsp smoked paprika
- Salt and pepper to taste
- Olive oil for frying
- Fresh parsley for garnish
Instructions

Heat olive oil in a large frying pan over medium heat.

Add the potatoes and fry until golden brown and crispy.

Remove the potatoes from the pan and set aside.

In the same pan, add the sliced onion, green and red peppers, and chorizo.

Cook until the vegetables are softened and the chorizo is cooked through.

Add the minced garlic and smoked paprika, and cook for another minute.

Return the potatoes to the pan and mix everything together.

Season with salt and pepper to taste.

Cook for another 5-7 minutes, until all the flavors are well combined.

Serve hot, garnished with fresh parsley.
