Ingredients
- 2 boneless, skinless chicken breasts, diced
- 1 bell pepper, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp vegetable oil
- 8 flour tortillas
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, avocado, cilantro
Instructions

In a large skillet, heat vegetable oil over medium heat. Add diced chicken and cook until browned and cooked through.

Push the chicken to one side of the skillet and add onion, bell pepper, and garlic. Cook until vegetables are tender.

Sprinkle cumin, chili powder, paprika, salt, and black pepper over the chicken and vegetables. Stir well to combine.

Place tortillas on a baking sheet. Spoon the chicken and vegetable mixture onto each tortilla. Top with shredded cheddar cheese.

Broil in the oven for 2-3 minutes or until cheese is melted and tortillas are crispy.
