- 8 tortillas
- 2 cups cooked chicken, shredded
- 1 cup cheddar cheese, shredded
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14 oz) enchilada sauce
- 1 tbsp vegetable oil
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Optional toppings: sour cream, avocado, cilantro
Instructions

Preheat the oven to 350°F (175°C).

In a large skillet, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Cook until they are softened, about 5 minutes.

Add the shredded chicken, ground cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for an additional 2-3 minutes until the chicken is heated through and well coated with the spices.

Warm the tortillas in the oven for a few minutes to make them pliable.

Spoon a generous amount of the chicken mixture onto each tortilla, sprinkle with cheddar cheese, and roll them up tightly. Place the rolled enchiladas in a baking dish.
