  • 8 tortillas
  • 2 cups cooked chicken, shredded
  • 1 cup cheddar cheese, shredded
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) enchilada sauce
  • 1 tbsp vegetable oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, avocado, cilantro

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large skillet, heat the vegetable oil over medium heat. Add the diced onion, bell pepper, and minced garlic. Cook until they are softened, about 5 minutes.

  3. Add the shredded chicken, ground cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for an additional 2-3 minutes until the chicken is heated through and well coated with the spices.

  4. Warm the tortillas in the oven for a few minutes to make them pliable.

  5. Spoon a generous amount of the chicken mixture onto each tortilla, sprinkle with cheddar cheese, and roll them up tightly. Place the rolled enchiladas in a baking dish.

  6. Pour the enchilada sauce over the rolled enchiladas and sprinkle with more cheddar cheese.

  7. Bake in the preheated oven for 20 minutes until the cheese is melted and bubbly, and the enchiladas are heated through.

  8. Serve the enchiladas hot with optional toppings such as sour cream, avocado, and cilantro.
