Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup orange juice
  • 1/4 cup lime juice

Instructions

  1. Preheat oven to 325°F (163°C).

  2. In a large Dutch oven, heat some oil over medium-high heat. Add the pork and cook until browned on all sides.

  3. Remove the pork from the pot and set aside. In the same pot, add the diced onions and minced garlic. Cook until onions are translucent.

  4. Add the dried oregano, ground cumin, chili powder, salt, and black pepper to the pot. Stir well to coat the onions and garlic.

  5. Return the pork to the pot and pour in the orange juice and lime juice. Stir to combine.

  6. Cover the pot and transfer it to the preheated oven. Cook for 3-4 hours until the pork is tender and can be easily shredded with a fork.

  7. Remove the pot from the oven and using two forks, shred the pork into smaller pieces.

  8. Heat a large skillet over medium-high heat. Transfer the shredded pork to the skillet and cook until the edges are crispy and browned, about 5-7 minutes.

  9. Serve the crispy pork carnitas in warm tortillas or use as a filling for tacos, burritos, or bowls.
