Ingredients
- 2 pounds beef chuck roast
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 2 chipotle peppers in adobo sauce, chopped
- 2 tablespoons lime juice
- 2 tablespoons apple cider vinegar
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon ground cinnamon
- 1 cup beef broth
- Salt and pepper, to taste
Instructions

Preheat the oven to 325°F (160°C).

Season the beef chuck roast with salt and pepper on all sides.

Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat. Add the beef roast and sear on all sides until browned, about 3-4 minutes per side.

Remove the beef from the pot and set aside.

In the same pot, add the minced garlic and chopped onion. Cook until softened, about 2-3 minutes.

Stir in the chipotle peppers, lime juice, apple cider vinegar, cumin, oregano, smoked paprika, and cinnamon. Cook for an additional 1-2 minutes.

Return the beef to the pot and add the beef broth. Bring to a simmer.

Cover the pot and transfer it to the preheated oven. Cook for 4-5 hours, or until the beef is tender and easily shreds with a fork.

Once cooked, remove the beef from the pot and shred it using two forks.

Return the shredded beef to the pot and mix it with the cooking juices.
