How To Make Mediterranean Chicken Sheet Pan Dinner

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • ¼ cup pitted Kalamata olives
  • ¼ cup crumbled feta cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Season the chicken breasts with salt, pepper, and the dried herbs.

  3. In a large bowl, combine the cherry tomatoes, bell peppers, red onion, garlic, olive oil, and a pinch of salt and pepper. Toss to coat.

  4. Place the chicken breasts on a sheet pan and arrange the vegetable mixture around them.

  5. Roast in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.

  6. Sprinkle the olives and feta cheese over the sheet pan dinner and return to the oven for an additional 2 minutes, until heated through.

  7. Garnish with fresh parsley before serving.
