Ingredients

  • 2 cans butter beans, drained and rinsed
  • 4 tbsp unsalted butter
  • 1 lemon, zest and juice
  • 2 tbsp fresh parsley, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large skillet, melt the butter over medium heat.

  2. Add the drained and rinsed butter beans to the skillet and stir to coat them in the melted butter.

  3. Squeeze the juice of the lemon into the skillet and sprinkle in the lemon zest.

  4. Stir in the chopped parsley and season with salt and pepper to taste.

  5. Cook the butter beans for about 10-15 minutes, stirring occasionally, until they are heated through and the flavors have melded together.

  6. Serve the Lemon & parsley butter beans as a side dish.
