Ingredients
- 1 cup adzuki beans
- 1 cup granulated sugar
- 1 pinch of salt
- 1 teaspoon vegetable oil
Instructions

Rinse the adzuki beans thoroughly under cold water and then soak them in water overnight.

Drain the soaked adzuki beans and transfer them to a large saucepan. Add enough water to cover the beans.

Bring the water to a boil over high heat, then reduce the heat to low and simmer the beans for about 30 minutes until they are soft.

Drain the beans and return them to the saucepan. Add fresh water and bring to a boil again. Reduce the heat to low and simmer for another 30 minutes. Repeat this process two more times, draining and adding fresh water each time.

After the final simmer, drain the beans and return them to the saucepan. Add the sugar and salt, and stir to combine.

Cook the mixture over medium heat, stirring constantly, until the sugar has dissolved and the mixture has thickened to a paste-like consistency, about 15-20 minutes.

Remove the saucepan from the heat and let the anko cool to room temperature.

Once cooled, transfer the anko to an airtight container and store in the refrigerator until ready to use.
