Ingredients
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 cup water
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 package cheese tortellini (9 oz)
- 2 cups fresh spinach
- Grated Parmesan cheese, for serving
Instructions

In a large pot, brown the Italian sausage over medium heat, breaking it into small pieces. Drain any excess grease.

Add the diced onion and minced garlic to the pot and cook until onion is translucent, about 5 minutes.

Stir in the chicken broth, diced tomatoes, water, dried basil, dried oregano, salt, and black pepper. Bring to a boil.

Reduce heat to low and simmer for 15 minutes.

Add the tortellini and cook for 7-9 minutes or until tender.

Stir in the fresh spinach and cook for an additional 2 minutes until wilted.
