- 2 large potatoes, peeled and grated
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter, for frying
Instructions

Place the grated potatoes in a clean kitchen towel and squeeze out the excess moisture.

In a large bowl, mix together the grated potatoes, flour, buttermilk, salt, and black pepper until well combined.

Heat a large frying pan over medium heat and melt 1 tablespoon of butter.

Drop spoonfuls of the potato mixture onto the hot pan, flattening them with the back of the spoon to form round pancakes.

Cook the boxty for about 4-5 minutes on each side, until golden brown and crispy.

Transfer the cooked boxty to a plate and keep warm while cooking the remaining mixture, adding more butter to the pan as needed.

Serve hot with your favorite toppings or as a side dish with Irish stew or bacon.
