Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/4 cup vegetable oil
  • 1/4 cup water
  • 1 cup potatoes, boiled and mashed
  • 1/2 cup peas, cooked
  • 1/2 cup carrots, diced and cooked
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • Salt to taste
  • Oil for deep frying

Instructions

  1. In a large bowl, combine the flour and salt. Add oil and mix well until crumbly. Gradually add water and knead until a smooth dough is formed. Cover and let it rest for 20 minutes.

  2. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add onions, garlic, and ginger. Saute until onions turn translucent.

  3. Add coriander powder, turmeric powder, chili powder, and salt. Mix well and cook for a minute.

  4. Add mashed potatoes, cooked peas, and carrots. Mix until well combined. Cook for 2-3 minutes. Remove from heat and let it cool.

  5. Divide the dough into equal sized balls. Roll each ball into a thin circle. Cut the circle in half to make two semicircles.

  6. Take a semicircle and fold it into a cone shape. Seal the edge using water. Fill the cone with the potato mixture and seal the top edge.

  7. Repeat with the remaining dough and filling.

  8. Heat oil in a deep pan over medium heat. Deep fry the samosas until golden brown and crispy. Drain on a paper towel.

  9. Serve hot with chutney or ketchup.
