Ingredients
- 2 cups runner beans, finely chopped
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- Salt to taste
- 1 tbsp vegetable oil
- 16 sheets of phyllo pastry
- 2 tbsp melted butter for brushing
Instructions

Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.

Add the runner beans and cook for 5 minutes until tender.

Add the spices (turmeric powder, cumin powder, coriander powder, red chili powder, and salt) and mix well.

Cook for another 2 minutes, then remove from heat and let it cool.

Preheat the oven to 375°F (190°C).

Take one sheet of phyllo pastry and brush it with melted butter.

Place another sheet on top and brush with butter again.

Cut the phyllo pastry into squares.

Place a spoonful of the runner bean mixture on each square.

Fold the square diagonally to form a triangle and seal the edges by pressing them together.

Repeat the process for the remaining squares and filling.

Place the samosas on a greased baking sheet and brush them with melted butter.

Bake in the preheated oven for 20-25 minutes or until golden and crispy.

Serve hot with chutney or ketchup.
