Ingredients
- 500g lamb, cut into pieces
- 2 onions, chopped
- 4 cloves of garlic, minced
- 1 inch ginger, grated
- 2 green chilies, slit
- 2 tomatoes, chopped
- 2 tbsp Madras curry powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- 1 cup coconut milk
- Salt to taste
- Fresh cilantro, for garnish
- 2 tbsp vegetable oil
Instructions

Heat oil in a large pan and add the chopped onions. Cook until golden brown.

Add the minced garlic, grated ginger, and green chilies. Cook for a minute.

Add the lamb pieces and cook until browned on all sides.

Add the chopped tomatoes and cook until they are soft and mushy.

Add the Madras curry powder, turmeric powder, red chili powder, and garam masala. Cook for a few minutes to roast the spices.

Add the coconut milk and salt. Stir well to combine all the flavors.

Cover the pan and simmer for 1.5 to 2 hours until the lamb is tender and the flavors are well infused.

Garnish with fresh cilantro and serve hot with steamed rice or naan.
