Serves:

Ingredients

  • 2 cups chickpeas, soaked and boiled
  • 2 cups spinach, washed and chopped
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 cloves of garlic, minced
  • 1 inch ginger, grated
  • 1 green chili, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnishing

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them crackle.

  2. Add chopped onions and sauté until golden brown.

  3. Add minced garlic, grated ginger, and chopped green chili. Cook for a minute.

  4. Add pureed tomatoes and cook until the oil separates.

  5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.

  6. Add boiled chickpeas and mix until well coated with the spices.

  7. Add chopped spinach, cover the pan, and let it cook for 10 minutes.

  8. Uncover the pan, add garam masala, and cook for another 5 minutes until the curry thickens.

  9. Garnish with fresh coriander leaves.

  10. Serve hot with rice or roti.
