Ingredients
- 4 medium-sized carrots, grated
- 3 cups milk
- 1/2 cup sugar
- 4 tablespoons ghee (clarified butter)
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (cashews, almonds, pistachios) for garnish
Instructions

Heat ghee in a pan and add the grated carrots. Cook on medium heat for 5 minutes, stirring occasionally.

Add the milk to the pan and bring to a boil. Reduce the heat to low and simmer until the carrots are cooked and the milk has reduced, stirring occasionally (approximately 30-40 minutes).

Add the sugar and cardamom powder to the pan. Mix well and continue to cook for another 10-15 minutes until the mixture thickens and starts to leave the sides of the pan.

Remove from heat and garnish with chopped nuts.

Serve hot or cold.
