How To Make Chicken Schnitzel with Brown Butter & Capers

Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- 1/2 cup unsalted butter
- 2 tbsp capers
- Juice of 1 lemon
- Fresh parsley, for garnish
Instructions

Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness.

In separate bowls, place the flour, beaten eggs, and breadcrumbs mixed with Parmesan cheese.

Season the chicken breasts with salt and pepper. Dip each breast into the flour, then the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere.

In a large skillet, melt the butter over medium heat. Add the breaded chicken breasts and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the capers and cook for about 1 minute. Add the lemon juice and cook for an additional minute.

To serve, place the chicken schnitzel on a plate and spoon the brown butter caper sauce over the top. Garnish with fresh parsley.
