How To Make Menudo
Serves:
Ingredients
- 1.5 pounds beef tripe, cleaned and cut into small pieces
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tablespoons oil
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 4 cups beef broth
- 1 bay leaf
- Salt and pepper to taste
- Optional toppings: chopped cilantro, diced onion, lime wedges
Instructions
-
In a large pot, heat the oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
-
Add the beef tripe to the pot and cook for about 10 minutes, stirring occasionally.
-
Add the diced tomatoes, tomato sauce, chili powder, paprika, cumin, dried oregano, bay leaf, salt, and pepper. Stir well to combine all the ingredients.
-
Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 2.5 to 3 hours, until the tripe becomes tender.
-
Remove the bay leaf from the pot. Taste and adjust the seasoning with salt and pepper if needed.
-
Serve the menudo hot, garnished with chopped cilantro, diced onion, and lime wedges. It can be enjoyed with corn tortillas or rice.
