How To Make Sweet Spiced Lamb Shanks with Quince

Ingredients
- 4 lamb shanks
- 2 tablespoons olive oil
- 2 onions, diced
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 teaspoons ground cumin
- 2 teaspoons ground cinnamon
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 2 quinces, peeled, cored, and quartered
- 2 cups chicken or beef broth
- 2 tablespoons honey
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Preheat the oven to 325°F (160°C).

In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat.

Add the lamb shanks and brown them on all sides. Remove the shanks and set them aside.

In the same pot, add the diced onions and cook until softened and lightly browned.

Add the minced garlic and grated ginger, and cook for another minute.

Stir in the ground cumin, cinnamon, coriander, turmeric, and cayenne pepper. Cook for a minute to toast the spices.

Return the lamb shanks to the pot and add the quinces, chicken or beef broth, and honey.

Season with salt and pepper to taste.

Bring the mixture to a simmer, then cover the pot and transfer it to the preheated oven.

Cook for 2 hours, or until the lamb is tender and falling off the bone.

Remove the pot from the oven and let it rest for a few minutes.

Serve the lamb shanks with the sauce and quinces, garnished with fresh chopped cilantro.
