How To Make Azerbaijani-style lamb with apricots & chestnuts
Serves:
Ingredients
- 1.5 kg lamb shoulder, cut into chunks
- 1 onion, chopped
- 4 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground turmeric
- 1 tsp ground cinnamon
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup dried apricots
- 1 cup peeled chestnuts
- 2 cups chicken broth
- 2 tbsp vegetable oil
- Fresh cilantro, for garnish
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the lamb chunks and brown them on all sides. Remove the lamb from the pot and set aside.

In the same pot, add the chopped onion and minced garlic. Sauté until they become soft and translucent.

Add the ground cumin, ground coriander, ground turmeric, ground cinnamon, salt, and black pepper to the pot. Stir well to coat the onions and garlic with the spices.

Return the lamb to the pot and add the dried apricots, peeled chestnuts, and chicken broth. Stir everything together.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 2 hours, or until the lamb is tender and the flavors have melded together.

Serve the Azerbaijani-style lamb with apricots & chestnuts over cooked rice or couscous. Garnish with fresh cilantro.
