How To Make Algerian Couscous Recipe

Ingredients
- 2 cups couscous
- 1 onion, chopped
- 2 carrots, diced
- 2 zucchini, sliced
- 1 bell pepper, chopped
- 1 can chickpeas, rinsed and drained
- 1 can diced tomatoes
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon cumin
- 1 tablespoon paprika
- 1 teaspoon turmeric
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Place the couscous in a large bowl and cover with boiling water. Let it sit for about 10 minutes until the couscous absorbs the water.

Meanwhile, heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until translucent.

Add the carrots, zucchini, bell pepper, and spices to the pot. Cook for about 5 minutes, stirring occasionally.

Add the chickpeas and diced tomatoes to the pot. Bring to a simmer and let cook for about 10 minutes.

Fluff the couscous with a fork and add it to the pot. Stir well to combine with the vegetables and sauce. Cook for an additional 5-10 minutes until heated through.

Serve the Algerian couscous hot, garnished with fresh cilantro.
