Ingredients
- 1.5 lbs chicken wings
- 2 tbsp Sichuan peppercorns
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tsp chili flakes
- 2 tsp minced garlic
- 1 tsp grated ginger
- 1 tsp sugar
- salt, to taste
- vegetable oil, for frying
- green onions, for garnish
Instructions

In a dry skillet, toast the Sichuan peppercorns over medium heat until fragrant, about 2 minutes. Remove from heat and grind into a fine powder using a mortar and pestle.

In a bowl, combine the ground Sichuan peppercorns, soy sauce, sesame oil, chili flakes, minced garlic, grated ginger, sugar, and salt. Mix well.

Add the chicken wings to the bowl and toss to coat them evenly with the marinade. Let marinate for at least 30 minutes, or overnight for more flavor.

Preheat the oven to 400°F (200°C).

Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Fry the chicken wings in batches until golden brown and crispy, about 8 minutes per batch. Drain on a paper towel-lined plate.

Transfer the fried chicken wings to a baking sheet and bake for an additional 10 minutes to ensure they are cooked through.
