A delicious and healthy tofu dish smothered in a sweet and savory soy ginger glaze.

Ingredients
- 1 block of firm tofu, drained and cut into small cubes
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tbsp honey
- 1 tbsp grated ginger
- 1 garlic clove, minced
- 1 tsp cornstarch
- green onions, sliced for garnish
Instructions

Preheat oven to 375°F.

In a bowl, mix together soy sauce, rice vinegar, honey, ginger, garlic, and cornstarch.

Place tofu cubes on a baking sheet and pour the soy-ginger glaze over the tofu.

Bake in the oven for 20-25 minutes or until the tofu is crispy and browned.

Garnish with sliced green onions and serve with rice.
