Ingredients
- 8 cups vegetable broth
- 2 stalks lemongrass, bruised
- 2 inches ginger, sliced
- 3 cloves garlic, minced
- 2 Thai red chilies, sliced
- 1 cup sliced mushrooms
- 2 cups baby bok choy, chopped
- 1 cup bean sprouts
- 1 cup cooked rice noodles
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- Juice of 2 limes
- Fresh cilantro, for garnish
- Fresh lime wedges, for serving
Instructions

In a large pot, bring vegetable broth to a boil. Add lemongrass, ginger, garlic, and Thai red chilies. Simmer for 30 minutes to infuse flavors.

Strain the broth to remove lemongrass, ginger, and garlic.

Return the broth to the pot and add mushrooms, bok choy, bean sprouts, cooked rice noodles, soy sauce, and fish sauce. Cook for another 10 minutes or until the vegetables are tender.

Stir in lime juice.

Serve hot, garnished with fresh cilantro and lime wedges.
