How To Make Instant Pot Thai Green Curry
A flavorful Thai dish with juicy chicken and fresh vegetables cooked in creamy green curry sauce.
Serves:
Ingredients
- 1 lb boneless chicken breast, cubed
- 1 can unsweetened coconut milk
- 1/2 cup green curry paste
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 1 tbsp vegetable oil
- Salt to taste
Instructions

Set Instant Pot to sauté mode and add vegetable oil.

Add chicken and sauté for 3-4 minutes until browned.

Add green curry paste, fish sauce and brown sugar. Mix well.

Add sliced onions and peppers. Mix well.

Add the coconut milk and give a quick stir.

Close the lid, seal the valve and set the pressure cook time to 5 minutes.

Once the pressure is released, open the lid and season with salt.

Serve hot with steamed rice.
