How To Make African Vegetable Stew
A hearty and flavorful stew featuring a variety of delicious African vegetables and spices.
Serves:
Ingredients
- 1 tbsp of olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 sweet potatoes, peeled and diced
- 1 bell pepper, diced
- 1 cup of chopped kale
- 1 15 oz can of chopped tomatoes
- 2 cups of vegetable broth
- 1 tsp of ground cumin
- 1 tsp of smoked paprika
- Salt and pepper to taste
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic, and sauté until softened.

Add the carrots, sweet potatoes, and bell pepper, and cook for 5 minutes.

Add the kale, chopped tomatoes, vegetable broth, cumin, smoked paprika, salt, and pepper.

Bring to a boil, then reduce the heat and let simmer for 20 minutes, or until vegetables are tender.

Serve hot with bread or rice.
