How To Make African Red Lentil Soup
This soup is a hearty, flavorful, and nutritious dish that will warm you up on a cold day.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 2 cups vegetable broth
- 1 cup dried red lentils
- 1 can diced tomatoes
- 1 carrot, peeled and diced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Heat the olive oil in a large pot over medium heat.

Add the onion and garlic and sauté until fragrant, about 2-3 minutes.

Add the cumin, coriander, and smoked paprika and sauté for an additional minute.

Add the vegetable broth, dried red lentils, diced tomatoes, and carrot and stir to combine.

Bring the soup to a boil then reduce the heat to low, cover, and simmer until the lentils are tender, about 20-25 minutes.

Remove from heat and season with salt and pepper to taste.
