How To Make African Chicken Peanut Soup Recipe
A rich and flavorful soup made with tender chicken and a creamy peanut butter base.
Serves:
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into small cubes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 tbsp ginger, grated
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1/2 cup creamy peanut butter
- 4 cups chicken broth
- 1 can diced tomatoes
- Salt and pepper, to taste
- 1/4 cup chopped fresh cilantro, for garnish
Instructions

Heat a large pot over medium heat and add chicken. Cook until browned on all sides.

Add onion and sauté until translucent. Add garlic, bell pepper, and ginger and cook for 5 minutes.

Stir in smoked paprika and cayenne pepper and cook for 1 minute.

Add peanut butter and stir until melted.

Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 25-30 minutes.

Remove from heat and allow to cool slightly. Puree mixture in a blender or food processor until smooth.

Return soup to pot and season with salt and pepper to taste. Serve hot, garnished with cilantro.
