How To Make African Quinoa Pilaf Recipe
This dish is a delicious blend of African flavors, combined with the superfood quinoa.
Serves:
Ingredients
- 1 cup quinoa
- 2 cups chicken or vegetable broth
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup raisins
- 1/2 cup sliced almonds
- 1/4 cup chopped fresh cilantro
Instructions

Rinse quinoa in a fine mesh strainer and drain.

In a saucepan, heat broth and quinoa over medium-high heat until boiling.

Reduce heat to low, cover and simmer for 15-20 minutes or until liquid is absorbed and quinoa is tender.

In a skillet, heat olive oil over medium heat. Cook onion and garlic until softened.

Add spices, salt, and black pepper to the skillet. Cook for 1-2 minutes to release the flavors.

Add cooked quinoa, raisins, and almonds. Stir to combine.

Cook for another 1-2 minutes or until heated through.

Stir in cilantro and serve hot.
