How To Make African Peanut Soup
Rich and creamy soup with bold flavors of peanuts and spices.
Serves:
Ingredients
- 1 tablespoon of vegetable oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 tablespoon of grated ginger
- 1 teaspoon of cumin powder
- ¼ teaspoon of cayenne pepper
- 4 cups of chicken or vegetable broth
- 1 can of diced tomatoes, drained
- 1 cup of smooth peanut butter
- 1 sweet potato, peeled and diced
- Salt, to taste
- Chopped fresh cilantro, for garnish
- Lime wedges, for serving
Instructions

In a large pot, heat the oil over medium heat.

Add onion and cook for 5 minutes until softened.

Add garlic, ginger, cumin, and cayenne pepper and cook for 1 minute until fragrant.

Add broth, tomatoes, peanut butter, and sweet potato.

Bring to a boil, then reduce heat and simmer for 20 minutes.

Use an immersion blender or a regular blender to puree the soup until smooth.

Season with salt to taste.

Serve hot, garnished with cilantro and lime wedges.
