How To Make African Coconut Rice Recipe
A creamy and flavorful rice dish with a tropical twist, perfect as a side or main dish.
Serves:
Ingredients
- 1 cup of jasmine rice
- 1 can of coconut milk
- 1 tbsp of vegetable oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 tsp of grated ginger
- 1/2 tsp of ground coriander
- Salt and pepper, to taste
- Chopped cilantro or scallions, for serving
Instructions

Rinse the rice under running water until the water runs clear. Drain and set aside.

Heat the oil in a medium saucepan over medium heat. Add the onion and cook until softened, about 2-3 minutes.

Add the garlic, ginger, and coriander, and cook for another minute or until fragrant.

Pour in the coconut milk and stir in the rice. Season with salt and pepper to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.

Fluff the rice with a fork, sprinkle with cilantro or scallions, and serve.
