How To Make Coconut Milk Vegetable Soup

A creamy and flavorful soup with mixed vegetables in coconut milk.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 carrot, chopped
  • 1 cup green beans, chopped
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 1 tsp curry powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, sauté until soft.

  3. Add red bell pepper, zucchini, carrot and green beans, cook for 5 minutes.

  4. Add coconut milk, vegetable broth and curry powder. Simmer for 10-15 minutes.

  5. Season soup with salt and pepper. Garnish with cilantro.
