Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 carrot, chopped
- 1 cup green beans, chopped
- 1 can coconut milk
- 2 cups vegetable broth
- 1 tsp curry powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and garlic, sauté until soft.

Add red bell pepper, zucchini, carrot and green beans, cook for 5 minutes.

Add coconut milk, vegetable broth and curry powder. Simmer for 10-15 minutes.

Season soup with salt and pepper. Garnish with cilantro.
