How To Make Coconut Milk Green Curry Recipe
Delicious and creamy Thai green curry made with coconut milk and fresh greens.
Serves:
Ingredients
- 1 tbsp of oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 2 tbsp of green curry paste
- 1 can of coconut milk
- 2 cups of mixed veggies, chopped (such as broccoli, zucchini, carrots, and bell peppers)
- 1 cup of fresh greens, chopped (such as spinach or kale)
- 1 tbsp of brown sugar
- 1 tbsp of fish sauce
- 1 lime, juiced
- Salt, to taste
Instructions

In a pot, heat oil over medium heat. Add chopped onion and garlic. Sauté until onion is translucent.

Add green curry paste and cook for 1-2 minutes until fragrant.

Pour in the coconut milk and mixed veggies. Stir to combine. Let it simmer for 10-15 minutes or until veggies are cooked.

Add fresh greens, brown sugar, fish sauce, lime juice, and salt. Cook for an additional 3-5 minutes.

Serve over steamed rice.
