How To Make Coconut Milk and Lime Pound Cake
Moist and zesty pound cake infused with coconut milk and lime.
Serves:
Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup coconut milk
- 1/4 cup fresh lime juice
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- Zest of 1 lime
Instructions

Preheat the oven to 350°F.

Grease a loaf pan with cooking spray or butter and set aside.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Add in the eggs, one at a time, until well combined.

Mix in the coconut milk and lime juice.

Stir in the flour, baking powder, salt, and lime zest until just combined.

Pour the batter into the prepared loaf pan.

Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool for 10 minutes in the pan.

Remove the pound cake from the pan and let cool completely on a wire rack.
