How To Make Spicy Red Lentil Chili with Guacamole & Rice

Ingredients
- 1 cup red lentils
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and diced
- 2 tablespoons olive oil
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional, for extra heat)
- 1 can (400g) diced tomatoes
- 2 cups vegetable broth
- Salt to taste
- Guacamole, for serving
- Cooked rice, for serving
Instructions

Rinse the red lentils with cold water and set aside.

In a large pot, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeno pepper. Saute until the vegetables are softened, about 5 minutes.

Add the cumin powder, chili powder, paprika, and cayenne pepper (if using) to the pot. Stir well to coat the vegetables in the spices.

Add the red lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are cooked and tender.

Season with salt to taste.

Serve the chili hot, topped with guacamole and alongside cooked rice.
