Ingredients
- 1 cup dried lentils
- 2 cups water
- 1 chicken breast, cooked and shredded
- 1 Serrano pepper, thinly sliced
- 2 cups rocket leaves
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Rinse the lentils under cold water and place them in a saucepan with the water. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until the lentils are tender. Drain and set aside.

In a large bowl, combine the cooked lentils, shredded chicken, Serrano pepper slices, and rocket leaves.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the lentil mixture and toss to combine.
