Ingredients
- 1.5 lbs chicken, boneless and skinless, chopped into cubes
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, diced (optional for extra heat)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup chicken broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro, chopped (for garnish)
Instructions

Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until they become translucent.

Add the chicken to the pot and cook until browned on all sides.

Stir in the diced tomatoes, chicken broth, chili powder, cumin, paprika, salt, and pepper. Bring the mixture to a simmer.

Add the black beans, bell pepper, and jalapeno pepper (if using), and stir well to combine.

Reduce the heat to low, cover the pot, and let it simmer for 45 minutes to 1 hour, stirring occasionally, until the chicken is cooked through and tender.

Taste and adjust the seasonings if necessary.

Serve the spicy chicken and bean stew hot, garnished with fresh cilantro.
