Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 8 large eggs
- 1 bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 cup spinach leaves
- 1/4 cup fresh cilantro, chopped
Instructions

In a bowl, mix together paprika, cumin, garlic powder, onion powder, salt, and pepper. Rub the spice mixture onto the chicken breasts.

Heat olive oil in a skillet over medium heat. Cook the chicken breasts until they are cooked through and browned on both sides, about 6-8 minutes per side. Remove from the skillet and let them rest for a few minutes before slicing.

In a separate bowl, whisk the eggs until well beaten. Season with salt and pepper.

In the same skillet, add bell pepper and onion. Cook until they are soft and slightly caramelized.

Pour the beaten eggs into the skillet, making sure they cover the entire surface. Cook until the eggs are set, about 2-3 minutes.

Flip the egg omelette carefully and cook for another minute.

Remove the omelette from the skillet and cut into 4 equal squares.

To assemble the wraps, place a square of the cooked egg omelette on a plate. Top with sliced chicken, spinach leaves, and cilantro. Roll it up tightly.
