Ingredients
- 500g boneless chicken, cut into small pieces
- 2 tablespoons green curry paste
- 1 can (400ml) coconut milk
- 1 cup green beans, trimmed
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- Juice of 1 lime
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions

In a large pan, heat some oil and add the chicken pieces. Cook until they are browned on all sides.

Add the green curry paste and cook for 2-3 minutes until fragrant.

Pour in the coconut milk and bring to a simmer.

Add the green beans, broccoli, and bell peppers. Cook for 5-7 minutes until the vegetables are tender.

Stir in the fish sauce, brown sugar, and lime juice. Cook for another minute.
