Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 chorizo sausage, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, combine the chicken thighs, sliced chorizo, bell peppers, onion, minced garlic, olive oil, smoked paprika, dried oregano, salt, and pepper. Mix everything well to coat the chicken and vegetables.

Transfer the chicken and vegetables to a large baking tray or roasting pan, arranging them in a single layer.

Roast in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.

Remove from the oven and let the traybake rest for a few minutes.

Sprinkle with fresh chopped parsley before serving.
