Ingredients
- 1 lb chicken breasts, diced
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh lemon juice
- 1/4 cup tahini
- 1/4 cup water
- 1 garlic clove, minced
- Salt, to taste
Instructions

In a large skillet, heat the olive oil over medium heat. Add the diced chicken and sprinkle with paprika, cumin, garlic powder, onion powder, salt, and pepper. Cook until the chicken is cooked through and browned, about 8-10 minutes.

In a medium bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley.

In a small bowl, whisk together the lemon juice, tahini, water, minced garlic, and salt to make the dressing.

Divide the quinoa mixture among 4 bowls. Top with the cooked chicken. Drizzle the tahini dressing over the bowls.
