How To Make Poached Chicken with Lemon & Tarragon Sauce

Ingredients
- 4 chicken breasts
- 1 lemon, sliced
- 4 sprigs of fresh tarragon
- 4 cups chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions

In a large saucepan, add the chicken broth, lemon slices, and tarragon sprigs. Bring to a boil.

Reduce heat to low and add the chicken breasts. Poach for 15-20 minutes, or until cooked through.

Remove the chicken from the broth and set aside.

Strain the broth and return it to the saucepan. Heat over medium heat and add the lemon juice and heavy cream. Cook until slightly thickened.

Season the sauce with salt and pepper to taste.

Serve the poached chicken with the lemon and tarragon sauce.
