Ingredients
- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions

Season the chicken thighs with salt and pepper. Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the chicken thighs and cook until browned on both sides. Remove from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until softened and fragrant.

Add the sliced mushrooms and cook until they have released their moisture and are browned.

Stir in the tomato paste, dried thyme, and dried rosemary. Cook for another minute.

Add the diced tomatoes and chicken broth. Bring to a simmer.

Return the chicken thighs to the pot and nestle them in the sauce. Cover and simmer for 30 minutes, or until the chicken is cooked through.

Serve hot, garnished with chopped fresh parsley.
